They are cooked as greens. Cassava leaves are high in proteins and contain different types of proteins. It is made up of lots of Arginine, Lysine, Valine, Leucine, and Isoleucine. Cassava leaves contain up to 10 times the amount of proteins found in the roots.Cassava leaves are highly fibrous, dense and grassy. Ours is ground and frozen which saves you a lot of sweat around a mortar and pestle.
